JOB SUMMARY: Supports the Beverage Manager in day-to-day operation of the F&B department, including updating and maintaining all outlets throughout the property. Ensures the cleanliness and sanitation of all work areas and equipment in accordance with Health Department standards. The Assistant F&B Manager will work with the management team to lead the tactical implementation of strategic initiatives under the direction of the Beverage Manager and Director of Food and Beverage. Working closely with all department team members, creates a positive guest experience throughout the property.
JOB RESPONSIBILITIES:
  • Responsible for supporting the Beverage Manager in all aspects of F&B quality, cost control, and completing inventories.
  • In the absence of the Beverage Manager, responds to all inquiries regarding the financial performance of the F&B department.
  • Monitor and ensure that operating procedures are met on a consistent basis.
  • Communicate effectively with front and back of house management and staff.
  • Oversee the flow of service on the gaming floor, all property bars, entertainment, restaurant outlets and special events.
  • Provide day to day leadership direction to the F&B hourly staff.
  • Demonstrate the ability to perform the duties of all bars, service wells and restaurants.
  • Work closely with the managers to monitor and control labor within the department.
  • Maintain adequate coverage in F&B outlets based on business demands.
  • Responsible for assisting with the hiring, training, evaluation, and corrective counseling of F&B team members.
  • Ensures all team members follow recipes, measurements, quantities, and other information so each item served can be duplicated consistently.
  • Ensure all prep items are made to approved standards.
  • Confirms that all opening and closing checklists are adhered to and product(s) stored and secured.
  • Inspects serving areas to ensure observance of safe, sanitary handling practices.
  • Make certain all product(s) is placed and restocked in designated areas.
  • Maintain a solid knowledge of F&B products and ensure all products are properly rotated.
  • Immediately research and resolve any malfunctions of equipment to ensure optimum operation and minimal down time.
  • Ensures all F&B team members are using all correct equipment, cleaning, and sanitizing products in accordance with all SDS sheets and departmental standards.
  • Demonstrates flexibility by working a variety of shifts to ensure presence and coverage as necessary based on business demands.
  • Immediately reports any concerns or opportunities to the Director of Food & Beverage.
  • To provide BIG Service to internal and external guests and ensure their complete satisfaction, inclusive of greeting and interacting with guests in a friendly and enthusiastic manner, anticipating and meeting guest needs and preferences, remaining calm and professional when dealing with guests that are difficult or upset.
EDUCATION AND EXPERIENCE:
  • Previous F&B management experience preferred.
  • High school diploma or its equivalent required.
  • Must be 21 years of age or older.
  • Must pass all required pre-screening and background checks.
  • Internal candidates must meet the eligibility requirements outlined in the Transfer and Promotion Policy.
  • Ability to work a variety of shifts, this includes day, swing, late-night, weekend, and holiday shifts as scheduled.
  • Must be able to obtain required work cards, and non-gaming registration as required by the local jurisdiction.
  • Must be able to obtain and provide S.T.A.R Certification upon start of employment.
