CTC: ₹6,00,000 – ₹9,00,000 per annum
Industry: FMCG – Bakery & Confectionery (Packaged Cakes)
Role Overview
We are looking for a hands-on Assistant Production Manager with mandatory packaged cake manufacturing experience to support daily factory operations and ensure smooth execution of production plans.
The role is execution-focused, requiring strong shopfloor presence, process discipline, and coordination across production, quality, and maintenance. The candidate will play a key role in stabilizing production, reducing variability, and ensuring consistent output and quality in a fully/partially automated cake manufacturing setup.
Key Responsibilities
1. Production Execution & Line Management
- Execute daily and shift-wise production plans as per schedule.
- Monitor output, line speed, and downtime; take corrective actions in real time.
- Ensure proper manpower deployment across lines and shifts.
2. Process Control & Consistency
- Maintain consistency in product weight, texture, and appearance.
- Monitor critical process parameters (batter viscosity, baking time, temperature profiles, deposition accuracy).
- Identify deviations and coordinate with QA and maintenance for immediate correction.
3. SOP Implementation & GMP Compliance
- Ensure strict adherence to SOPs, GMP, and GHP practices on the shopfloor.
- Enforce hygiene practices (hairnets, gloves, sanitation, allergen control).
- Train operators and helpers on standard procedures and discipline.
4. Loss & Wastage Control
- Track and control wastage (RM loss, rejections, giveaway, packaging loss).
- Identify root causes of variation (weight fluctuation, under/overfill, rejection).
- Implement corrective and preventive actions (CAPA).
5. Coordination with Quality Team
- Ensure in-process quality checks are followed.
- Support QA in trials, validations, and product approvals.
