SKOSH is a Japanese-inspired café brand known for sandos, onigiri, and matcha-led drinks, part of The Hey Co family of outlets. Opening July 2026, SKOSH Scotts Square is our second home — a Hand Roll & Matcha Bar bringing made-to-order hand rolls, specialty matcha, and playful seasonal creations to the Orchard area.
The Role
We're looking for a Chef de Cuisine to lead kitchen operations at SKOSH Scotts Square from pre-opening through day-to-day service. You'll own menu execution, food quality, and kitchen team performance, working closely with the founding team to bring the Scotts Square concept to life.
Key Responsibilities
- Lead daily kitchen operations, ensuring consistency and quality across hand rolls, matcha-based food items, and seasonal specials.
- Manage food costing, portioning, and wastage control to meet margin targets.
- Recruit, train, and supervise kitchen staff, including scheduling and performance management.
- Maintain compliance with SFA food hygiene and safety standards, and hold or be willing to obtain relevant food safety certifications (e.g. WSQ Food Safety Course Level 1).
- Work with the culinary and brand team on menu development, including new launches and limited-time offerings.
- Manage kitchen inventory, supplier relationships, and stock ordering. Uphold cleanliness, equipment maintenance, and workplace safety standards.
Requirements
- At least 3–5 years of kitchen experience, with prior experience in a head chef, sous chef, or CDC role, ideally in a café, Japanese, or fast-casual concept.
- Strong leadership and team management skills, comfortable running a lean kitchen team. Solid understanding of food costing and inventory management.
- Valid food hygiene certification (or willingness to obtain one)
