About the Role:

Analyzes Food & Beverage and Retail department costs and control factors to ensure the implementation of cost-effective measures throughout all Hotel departments. Prepares various reports and conducts weekly meetings to keep departments and directors apprised of trends and cost factors. Plans and directs actions to be performed to correct activities harmful to the profitability of our food & beverage and retail departments.

Essential Functions:

  • Researches, analyzes, and prepares various reports, analyses, and studies as directed by the Director of Food & Beverage and Director of Accounting, including Profit and Loss statements.
  • Monitors Food & Beverage and Retail expenses and costs in all Food & Beverage and Retail outlets through analysis of Profit & Loss statements, daily sales, purchases, requisitions and consumption. Produces a daily food cost report and identifies menu costing and control issues. Assists outlet managers in controlling expenses and other cost control methods.
  • Prepares costing menus, set prices, and mark-ups for Food & Beverage including quarterly and annual menu updates and Retail items for Recreation.
  • Monitors and updates Foodtrak for both Food and Beverage and Retail as needed.

Supportive Functions:

In addition to performance of the essential functions, this position may be required to perform a combination of the following supportive functions, at the discretion of the manager based on the particular requirements of the hotel.

  • Performs other duties as requested by the Director of Food & Beverage and Director of Accounting/Controller.
  • Attends hotel meetings such as monthly statement and department meetings and may conduct additional meetings as requested.
  • Attendance required to assist with first of month closing deadlines, regardless of day of week until completed or released by Director of Accounting

Job Knowledge, Skills, and Abilities:

The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the job, with or without reasonable accommodation, using some other combination of skills and abilities.

  • Possession of excellent communication skills, both verbal and written
  • Office Machines: operate calculator/10-key, copier, scanner, fax, multi-line phone
  • Skilled in use of Microsoft Office, particularly Excel
  • Ability to effectively work with various departments in a professional manner with people in person, by phone and email
  • Ability to prioritize and organize workload to ensure deadlines are met
  • Attention to detail to ensure accuracy
  • Thorough knowledge of Food & Beverage outlet operations including food, beverages, and inventory control
  • Ability to analyze a large volume of complex financial information from many sources and create reports, forecasts, and projections
  • Ability to learn and perform all essential functions accurately and safely with minimal direct supervision

Qualifications:

Education:

Any other combination of education and experience that provides the required knowledge, skills, and abilities. High school graduate or equivalent required. Some college preferred.

Experience:

Finance and Accounts Receivable experience preferred. Some work experience in related field required. Large, luxury resort properties (over 500 rooms) experience is preferred.
