Cuisine Chef (Dim Sum Chef I)

Job Purpose:

The Cuisine Chef (Dim Sum Chef I) is responsible for leading the dim sum section,ensuring high standards in food preparation, quality, and consistency across all F&B outlets, banqueting functions, and events.

This role supports overall kitchen operations, drives menu innovation, and ensures compliance with food safety and hygiene standards, while supervising junior team members.

Role and Responsibilities

  • Prepare and oversee a range of dim sum items (steamed,fried, baked) with consistent quality and presentation
  • Supervise and guide Dim Sum Chef II and junior kitchen staff
  • Plan mise en place and manage daily production efficiently
  • Monitor ingredient quality, stock levels, and control food wastage
  • Ensure compliance with food safety, hygiene, and licensing requirements (SFA/NEA)
  • Maintain cleanliness and proper organization of the kitchen section
  • Assist in planning and execution of food promotions,events, and banquets
  • Develop and update menus, standardised recipes, and food presentation (including photos)
  • Drive innovation through new dim sum creations and presentation styles
  • Ensure all kitchen equipment is properly maintained and in safe working condition
  • Any other duties/projects as assigned by Supervisor and/or Management.
  • Follow the workplace safety and health system, safe work procedures or safety rules implemented at the workplace.
  • Not engage in any unsafe or negligent act that may endanger yourself or others working around you.
  • Use personal protective equipment provided to you to ensure your safety while working. You must not tamper with or misuse the equipment.

Requirements

  • Certification in culinary arts with 5-8 years of relevant experience in Chinese Restaurant or similar environment
  • Ability to provide creative innovative in menu, preparation and presentation in culinary forms
  • Ability to multitask and have good time management skills
  • Strong leadership qualities to lead and motivate team
  • Dependable and good team player
  • Good communication and interpersonal skills
  • Excellent Service Orientation
  • Able to work early mornings, weekends, and public holidays
