Director of Wine & Dine
Job Purpose
Lead and oversee all Food & Beverage operations to maximize revenue, profitability, guest satisfaction, and team engagement while maintaining exceptional service standards and operational excellence.
Key Responsibilities
- Develop and execute the Food & Beverage strategy, budget, forecasts, and promotional plans to achieve financial and operational goals.
- Oversee the daily operations of all F&B outlets, including Restaurants, Bars, Banquets, Room Service, Stewarding, and Kitchen.
- Drive revenue growth through innovative dining concepts, events, menu development, and effective cost control.
- Ensure outstanding guest experiences by maintaining high-quality food, beverage, and service standards.
- Lead, coach, develop, and inspire the F&B leadership team, including recruitment, performance management, and talent development.
- Collaborate with the Executive Chef and department leaders on menu planning, pricing strategies, and operational improvements.
- Monitor business performance, prepare management reports, and recommend strategies to enhance profitability and guest satisfaction.
- Ensure compliance with hotel policies, health & safety regulations, and company standards while fostering an inclusive and positive workplace culture.
- Bachelor's degree in Hospitality Management, Hotel Management, Business Administration, or a related field.
- Minimum 8–10 years of progressive Food & Beverage management experience, with at least 3 years in a senior leadership role within an upscale or luxury hotel.
- Strong leadership, people management, and coaching skills with the ability to build high-performing teams.
- Proven experience in managing multiple F&B outlets, including restaurants, bars, banquets, room service, and stewarding.
- Strong financial acumen with experience in budgeting, forecasting, cost control, revenue management, and profitability analysis.
- Excellent knowledge of food, beverage, wine, and current hospitality trends.
- Outstanding communication, interpersonal, negotiation, and problem-solving skills.
- Guest-focused with a passion for delivering exceptional service and luxury hospitality experiences.
- Strong organizational and project management skills with the ability to prioritize and manage multiple initiatives.
- Proficient in Microsoft Office and hotel POS/PMS systems.
- Excellent command of written and spoken English; additional language skills are an advantage.
- Flexible to work evenings, weekends, and public holidays as required by business operations.
