Old Town Tequila Factory is preparing for a relaunch, and we're looking for a hands-on General Manager who is excited to help shape what comes next.

This opportunity starts with the work behind a successful reopening: connecting with the team, developing training, organizing operations, and putting clear standards into practice. As we reopen, you'll lead the evening experience and help turn that preparation into consistent service, memorable meals, and a restaurant guests want to return to.

We're looking for an entrepreneurial leader who takes ownership, thinks creatively, and follows through. Someone who can develop a plan, explain it clearly, and work alongside the team to make it happen.

What you'll help build

A confident and connected team
Recruit, train/retrain, schedule, coach, and develop employees across the dining room, bar, and kitchen. Lead effective pre-shift meetings, clarify responsibilities, recognize good work, and address challenges with fairness and respect. Build trust through your presence and willingness to help.

Standards that hold up every day
Create and strengthen opening and closing routines, side-work assignments, training tools, and operating procedures. Partner with kitchen leadership to support consistent recipes, portions, presentation, and food quality. Verify that expectations are understood and completed.

A restaurant ready for a successful relaunch
Turn reopening priorities into practical action plans with clear responsibilities and timelines. Assess staffing, training, equipment, supplies, and service readiness. Identify obstacles early, bring solutions, and keep leadership informed as plans develop.

A strong partnership with the hotel
Work closely with hotel leadership and sales teams to connect restaurant service with the hotel guest experience. Coordinate staffing, preparation, timing, and execution for banquets, private gatherings, and hotel events. Help create opportunities that benefit both the restaurant and the hotel.

A business positioned to grow
Manage labor, purchasing, inventory, and controllable expenses with an understanding of budgets and financial performance. Use sales trends and guest feedback to identify improvements. Contribute creative ideas for marketing, promotions, events, and local connections that bring guests through the door.

A clean, safe, and well-maintained operation
Lead daily walkthroughs and reinforce food safety, sanitation, storage, labeling, temperature monitoring, and cleaning standards. Coordinate maintenance and preventive services, report concerns promptly, and follow through until issues are resolved.

The leader we're looking for

You enjoy being present where the work happens. You can coach an employee, resolve a guest concern, review operating results, and help the team prepare for a busy evening.

You bring:

  • An entrepreneurial spirit and a practical approach to problem-solving.
  • Strong leadership, training, delegation, and conflict-resolution skills.
  • The ability to turn ideas into clear plans, workable routines, and measurable results.
  • Consistent communication and follow-through, including timely updates through Microsoft Teams and other operating systems.
  • A commitment to a respectful workplace where employees receive both support and accountability.
  • Creativity in building sales while maintaining quality, service, and cost controls.

Experience and qualifications

  • At least two years of hands-on management or supervisory experience in a full-service restaurant, hotel, or country club.
  • Restaurant industry experience, with a background in both guest service and daily operations.
  • Experience with staffing, scheduling, training, inventory, purchasing, and labor management.
  • Confidence using POS systems, restaurant management software, and Microsoft Office.
  • High school diploma or equivalent.

Experience with restaurant openings or relaunches, hotel food and beverage operations, banquets, marketing, and implementing cleaning and sanitation programs is especially valuable.

Compensation and growth opportunity

The annual salary range is $80,000–$100,000, based on experience and qualifications.

During the restaurant's closure and reopening preparation, starting compensation may be set toward the lower end of this range. There is an opportunity for a salary increase following 90 days of employment and a successful restaurant relaunch, based on performance and agreed-upon goals. Starting compensation, review timing, and performance expectations will be discussed during the hiring process. An increase is not automatic.
