Reporting to our Director of Food & Beverage, we’re looking for an Executive Chef with serious Asian culinary credentials to lead the next chapter of our food story.

This is much bigger than running the pass. You’ll own the culinary direction and performance of Miss Mi while leading the wider kitchen operation across conferencing, events and hotel dining.

What’s on your plate?

  • Own and evolve the culinary direction of Miss Mi, delivering a bold and contemporary Pan-Asian offering that genuinely hits.
  • Lead, inspire and develop our kitchen Heartists, creating a high-performing culture people actually want to be part of.
  • Drive quality, consistency and creativity across restaurant, conferencing, events and hotel dining.
  • Own the numbers – food cost, labour, purchasing, margins, menu engineering, productivity and profitability. Because the food needs to be exceptional, but the math still needs to math.
  • Develop menus that balance creativity, authenticity, seasonality and commercial performance.
  • Keep food safety, hygiene, HACCP and WHS standards seriously on point.
  • Partner with the Director of Food & Beverage and hotel leadership team to keep evolving the guest experience and F&B strategy.

The lore we need from you:

  • Proven experience as an Executive Chef, Head Chef or accomplished senior culinary leader within a quality restaurant, hotel or high-volume hospitality environment.
  • Genuine Pan-Asian culinary expertise is essential. We’re looking for someone with serious knowledge of Asian flavours, ingredients, techniques and contemporary cuisine.
  • Strong financial acumen with a demonstrated understanding of P&L, food cost, labour, margins and the commercial realities of running a successful restaurant and kitchen.
  • Strong knowledge of food safety, HACCP, WHS and kitchen compliance.
  • A people-first leadership style with experience developing talent, building strong teams and creating a kitchen culture where people can thrive.
  • Commercial Cookery qualifications or equivalent culinary credentials.
