Job Description
Accountable for the overall success of the daily kitchen operations. Exhibits culinary talents by personally performing tasks while leading the staff and managing all food-related functions. Works to continually improve guest and employee satisfaction while maximising the financial performance in all areas of responsibility. Supervises all kitchen areas to ensure a consistent, high-quality product is produced. Responsible for guiding and developing staff, including direct reports. Must ensure sanitation and food standards are achieved. Areas of responsibility comprise overseeing all food preparation areas (e.g., banquets, room service, restaurants, bar/lounge and employee cafeteria) and all support areas (e.g., dish room and purchasing).

Lead kitchen team reflecting Stardom House Hotel identity – blend international expectations with Polish hospitality

Direct daily operations: breakfast, à la carte, room service, events

Perform employee duties when needed, including traditional Polish cooking (żurek, golonka, sernik)

Set performance standards using local ingredients (oscypek, pierogi, Krakow sausage)

Build trust among diverse team (Polish & international staff)

Model respect for Polish culinary heritage & modern food trends

Apply policies aligned with Polish labor laws & hotel standards
-
Adjust staffing for Krakow peak seasons (spring, summer, Christmas markets)

Supervise preparation of traditional & international dishes

Demonstrate techniques with energy efficiency & local sourcing (Stary Kleparz market)

Develop purchasing guidelines prioritizing Małopolska suppliers

Set performance, budget, team goals aligned with hotel brand

Communicate safety procedures: HACCP + Polish sanitary standards (GIS)

Manage food cost, supplies, uniforms, equipment – consider Poland’s VAT & import costs

Participate in budgeting

Direct menu development: Polish tradition + international flair for Old Town & Jewish Quarter guests

Monitor quality of regional products (obwarzanek, highland cheeses)

Create food displays inspired by Polish holidays (Wigilia, Easter, St. John’s Night)

Ensure food handling compliance & maintain Polish sanitary certificate (książeczka sanitarno-epidemiologiczna)

Prepare foods for VIP events, weddings, corporate dinners

Create “star moments” with personalized Polish dishes, live cooking, chef’s table

Engage guests at breakfast/dinners to explain Polish specialties

Adapt menus for dietary needs using Krakow-area farm produce

Partner with front-of-house for MICE events, concerts, film gatherings

Respond to guest feedback on Google, Booking.com, TripAdvisor

Language: English required; Polish highly desirable

Must appreciate Krakow’s culinary scene (milk bars to fine dining)
