Executive Pastry Chef - The Hoxton Bengaluru City
Summary
Lead the pastry program for a luxury hotel, designing seasonal desserts and bakery items while managing a team, costs, and food-safety standards in a high-volume hospitality setting.
What you’ll do…
- Create and lead the pastry vision across the hotel, making sure it feels distinctive, delicious and unmistakably Hox.
- Develop seasonal desserts, bakery items and event menus that balance creativity, consistency, speed and commercial sense.
- Set clear recipes, presentation standards and production plans so every outlet gets the quality it needs, every day.
- Recruit, train, coach and inspire the pastry team, creating opportunities for people to learn and progress.
- Plan staffing, production and workflow around the business, keeping the kitchen calm and organised even at busy moments.
- Own pastry food cost, stock, ordering, supplier relationships, portion control and waste reduction.
- Maintain excellent food safety, hygiene, allergen and HACCP standards, with accurate records and no shortcuts.
- Work closely with the Executive Chef, outlet chefs, F&B and Events teams to bring menus and guest experiences together.
- Stay curious about local ingredients, global pastry trends and new techniques, translating them into ideas that work for our guests.
- Make sure equipment is used safely, maintained properly and able to support the operation.
- Be visible, hands-on and willing to jump on the bench when the team needs you.
What we’re looking for…
- Individuals. You’re looking for a place where you can be you; no clones in suits here.
- Passion for hospitality - whether that’s a drink, a meal, an event or a bed for the night.
- You’re all about having a positive impact on the people you interact with, leaving them with a memorable experience.
- You’re not precious. We leave our egos at the door and help get things done.
- You’re up for doing things differently and trying (almost) everything once.
- If we got stuck in a lift together, we’d have a good time and share a few laughs.
- You want to be part of a team that works hard, supports each other, and has fun along the way.
- You’ll bring extensive pastry experience, including time leading a team in a busy hotel, restaurant, bakery or premium hospitality environment.
- You have excellent technical pastry and bakery knowledge, with a strong eye for presentation and a confident creative point of view.
- You understand food cost, production planning, purchasing, stock and waste, and know that creativity works best when the operation is under control.
- You’re an inspiring, fair and practical leader who enjoys teaching and developing others.
- You have thorough knowledge of food safety, hygiene, allergens and HACCP requirements.
- You’re organised, resilient and comfortable managing multiple outlets, events and deadlines.
- A culinary or pastry qualification is preferred, alongside strong professional experience.
