Description

Guided by Enlightened Hospitality, Union Square Hospitality Group’s (USHG) philosophy puts employees first, creating an environment where talent thrives, guests feel cared for, and excellence is a daily standard.

Located at the EDITION hotel, our team is excited to extend our offerings from New York to Detroit.

Join us as we continue to extend USHG’s signature hospitality to Detroit and help shape the future of the city’s vibrant dining scene.

Who you are:

Reporting directly to the Culinary Director, the Executive Pastry Chef leads pastry and baking operations across restaurant outlets, in-room dining, and banquet functions. Working side by side with each outlet’s Executive Chef and the Banquet Chef, this hands-on leader develops cohesive, high-quality pastry programs that reflect each outlet’s identity and the property’s standards for creativity, consistency, and hospitality.

The role oversees menu development, daily and event production, team leadership, purchasing, inventory, labor, food cost, and departmental performance.

You are accountable for executing pastry offerings for everyday service and large-scale events while upholding food safety standards and the principles of Enlightened Hospitality.

What you’ll do:

  • Champion Enlightened Hospitality through genuine care, attention to detail, collaboration, and a commitment to continuously improving the guest and team member experience
  • Lead daily pastry operations and remain hands-on in production and service; oversee staffing, scheduling, hiring, onboarding, training, coaching, and performance while fostering teamwork, accountability, creativity, and professional growth
  • Create seasonal pastry, baking, bread, dessert, and confectionery offerings; collaborate with outlet Executive Chefs to align menus with each guest experience and standardize recipes, portions, production methods, and presentation
  • Plan and oversee pastry production for weddings, conferences, corporate functions, and other events, coordinating menus, guest counts, dietary needs, staffing, timelines, and presentation with culinary and banquet partners
  • Lead the preparation and finishing of plated desserts, pastries, cakes, breads, petit fours, dessert displays, and specialty items while managing forecasting, storage, transport, service, and quality consistency
  • Manage purchasing, receiving, inventory, product rotation, par levels, and production systems; monitor food and labor costs, portioning, spoilage, productivity, and waste, implementing improvements and supporting budget planning
  • Deliver exceptional flavor, quality, and presentation across all service areas; respond to guest preferences, special requests, dietary needs, and service challenges
  • Ensure compliance with food safety regulations, allergen protocols, labeling, temperature controls, personal hygiene, and safe food handling, storage, transport, and service
  • Maintain clean, organized, and safe production areas and equipment; train the team on company policies, safety practices, loss prevention, and waste reduction
  • Align menus, production, staffing, and priorities with culinary and event partners; participate in tastings, leadership meetings, and event reviews; and complete scheduling, inventory reviews, production reports, and financial tracking accurately and on time

What we need from you:

  • Demonstrated pastry leadership experience and expertise in classical and contemporary baking, desserts, breads, chocolate, confectionery, and production planning
  • High school diploma/GED with at least four years of relevant experience, or a two-year degree in Culinary Arts, Baking and Pastry Arts, Hotel and Restaurant Management, or a related field with at least two years of relevant experience
  • Experience with banquet pastry, high-volume production, complex events, food and labor costs, inventory, purchasing, and waste control; luxury hotel or upscale hospitality experience preferred
  • Strong leadership, communication, organization, judgment, and problem-solving skills, with the ability to develop a diverse team, manage competing priorities, and collaborate across departments
  • Ability to communicate fluently in English. Additional languages preferred
