About the Role

Join our team as an Executive Sous Chef, where you will lead, supervise, and coordinate a large culinary team to deliver outstanding catering services. In this role, you will work closely with the Executive Chef and collaborate with Senior Management to ensure operational excellence and exceptional culinary standards.

Responsibilities

• Responsible to build up a communication bridge between Sous Chefs and Executive Chef to ensure required services are provided at all times.
• Schedule, assign, train, discipline and monitor the work of kitchen staff (Cooks, Stewards and Purchasing).
• Coordinate kitchen activities with their unit supervisors/managers as required, plan the meal program etc.
• Maintain portion of food and monitor cost controls levels, and monitor proper labelling and storage of foods and supplies.
• Inspect equipment and facilities to ensure proper use, safety, maintenance and sanitation.
• Conduct internal production audit with the help of Sous Chefs to ensure all production areas (Including chillers, freezers, storage areas, decanting rooms) are clean & tidy always & submit report to Executive Chef.
• Manage consistent smooth running of food production areas as per roster assignment.
• Ensure production standards in terms of food quality and recipes are followed.

• Train employees in new methods, techniques and procedures in fine dining preparation
