F&B Management Manager
Job Description
The F&B Operations Manager is responsible for overseeing the overall operations and performance of the company's F&B stalls. The role focuses on outlet performance, manpower coordination, operational standards and sourcing new locations for business expansion.
Key Responsibilities
1. Multi-Outlet Operations
- Oversee the daily operations of approximately 8 F&B stalls.
- Conduct regular outlet visits to ensure smooth operations.
- Monitor food quality, service standards, cleanliness and overall presentation.
- Work closely with stall supervisors to resolve operational issues.
- Ensure consistent operating standards across all stalls.
2. Manpower Management
- Coordinate manpower requirements and deployment across the stalls.
- Review staff rosters, attendance and manpower shortages.
- Work with supervisors to improve staff productivity and minimise unnecessary overtime.
- Assist management with recruitment and staff performance matters when required.
3. Sales & Cost Performance
- Monitor sales and operating performance of each stall.
- Monitor food cost, manpower cost, wastage and other major operating expenses.
- Identify underperforming stalls and recommend improvement measures.
- Implement initiatives to improve sales and profitability.
- Provide regular operational and performance updates to management.
4. New Location Sourcing & Business Expansion
- Source and identify potential new locations for F&B stall expansion.
- Liaise with coffeeshop operators, food court operators, landlords and property agents for available stalls.
- Conduct site visits and evaluate potential locations.
- Assess factors such as rental, footfall, surrounding population, competition and business potential.
- Negotiate basic commercial terms with landlords/operators for management approval.
- Coordinate the setup and opening of approved new stalls.
5. Compliance & Operational Standards
- Ensure outlets maintain appropriate food hygiene and operational standards.
- Ensure compliance with relevant SFA requirements and company procedures.
- Follow up on operational, hygiene or licensing issues where required.
Job Requirements & Qualifications
- Minimum 3–5 years of F&B operations experience, preferably managing multiple outlets or stalls.
- Diploma in F&B Management, Hospitality, Business Management or related discipline is preferred.
- Candidates with strong relevant F&B experience may be considered without a diploma.
- Experience in coffeeshop, food court or multi-outlet F&B operations is an advantage.
- Good understanding of outlet sales, food costs, manpower costs and profitability.
- Good leadership and staff management skills.
- Resourceful and able to independently source and evaluate potential new F&B locations.
- Comfortable dealing with landlords, property agents and coffeeshop/food court operators.
- Good communication and negotiation skills.
- Able to travel between different outlets regularly.
- Able to work independently and report directly to management.
