Food & Beverage Supervisor
Summary
Oversee daily food and beverage operations in a Nairobi hotel, leading staff, managing inventory, and ensuring service standards while resolving guest issues.
Reporting to the F&B Manager, responsibilities and essential job functions include but are not limited to the following:
- Organize and conduct daily pre-shift meetings communicating pertinent information to the colleagues.
- Schedule and direct staff in their work assignments.
- Train and direct staff in all food and beverage operations according to Fairmont Standard. Communicate effectively, both verbally and in writing, to provide clear direction to staff.
- Observe colleague performance, praise as well as encourage improvement when necessary, with effective and consistent performance management.
- Maintain proper inventory levels of wines, other beverages and supplies.
- Set-up and train employees on wine and beverage service and knowledge.
- Enforce proper beverage service standards during service.
- Assist in developing and implementing cost saving and profit enhancing measures.
- Assist in creating beverage promotions and recommend price adjustments based on market trends, quarterly competitive analysis and product sales mix.
- Conformance to Fairmont standards of dress and personal appearance is required.
- Interact positively with customers, promoting hotel facilities and services.
- Resolve problems to the satisfaction of involved parties.
- Continuously move throughout the restaurant and kitchen areas to visually monitor and take action to ensure food and beverage quality and service standards are met.
- Carefully handle customer complaints by conducting thorough research of the situation in order to choose the most effective solution.
- Utilize prescribed cash handling procedures to accurately charge customers, create forecast and revenue reports and write correspondence.
- Proven experience as a Food & Beverage Supervisor or in a similar leadership role
- Strong leadership and communication skills with the ability to motivate team members
- Excellent problem-solving abilities and meticulous attention to detail
- In-depth knowledge of food safety regulations and industry best practices
- Proficiency in inventory management, cost control, and POS systems
- Flexibility to work various shifts, including early mornings, late evenings, and weekends
- Passion for delivering exceptional guest experiences with a positive, customer-first mindset
- Fluency in English
- Understanding of local cuisine, cultural preferences, and customs in Kenya
- Ability to thrive in a fast-paced, dynamic environment
- Strong organizational and time management skills
- Proficiency in Microsoft Office suite and hospitality management software
