Head Chef role
The Head Chef leads all aspects of kitchen operations at FDR Suriname Holdings’ remote camp. This role plans menus, oversees meal preparation and presentation, manages and trains and develops kitchen staff, and ensures that meals are nutritious, high quality and delivered on schedule. The Head Chef is responsible for designing and implementing training programs, as well as supporting succession planning for kitchen staff, to ensure continuity and capability within the team. The role also controls food and labor costs, maintains compliance with health and safety regulations, and fosters a positive and productive work environment to support exploration activities.
Key Responsibilities
- Develop creative, nutritious and balanced menus; design recipes and portion sizes; ensure presentation and taste meet standards; adjust menus based on seasonal ingredients, dietary requirements and budget; set menu prices in consultation with management.
- Oversee daily preparation and cooking of meals; check the freshness and quality of ingredients; supervise cooking stations; work the line when needed; ensure timely service, consistency and correct presentation of dishes; expedite orders to maintain smooth service flow.
- Hire, train and schedule kitchen staff; delegate tasks and provide coaching; set performance standards and conduct evaluations; foster a respectful and collaborative work environment; lead daily briefings and enforce adherence to food safety and hygiene regulations.
- Forecast food requirements based on menus and headcounts; order and receive food and supplies; maintain vendor relationships; monitor and rotate stock; control food and labor costs; minimize waste and maintain accurate records of expenditures and inventory.
- Ensure compliance with Suriname health, safety and sanitation regulations; implement HACCP guidelines; maintain cleaning schedules, logs and records; inspect kitchen equipment and facilities; ensure staff wear proper protective clothing and follow safety practices; participate in audits and inspections.
- Collaborate with camp management on budgets, procurement and logistics; prepare reports on meal counts, inventory and costs; plan catering and special events; handle administrative duties such as staff rosters and pay inputs; communicate menu changes and respond to feedback and complaints.
Qualifications and Experience
- Secondary school completion or equivalent. Certificate or diploma in food production, culinary arts, nutrition or related field required; ongoing education in food service management or menu planning is advantageous.
- Minimum 7 years of progressive kitchen experience with at least 3 years as Sous Chef or Head Chef, including large-volume or remote camp operations.
Demonstrated ability to manage staff, plan menus, control costs and deliver high-quality meals under challenging conditions. - Thorough knowledge of food preparation, menu planning, portion control, nutrition, kitchen sanitation and equipment operation; ability to plan health‑conscious menus, convert measurements and manage costs; proficiency with records and reports.
- Food handler certificate and certification in food safety and sanitation. Additional culinary certifications and managerial training are advantageous.
- Ability to read and interpret recipes, menus and cost sheets; communicate clearly in Dutch / English / Sranan Tongo; provide training and feedback to staff; compile reports and documentation.
Working Conditions
- Camp-based in remote exploration and mining locations in Suriname with rotational field schedules, typically ten (10) consecutive days on in the field and four (4) days off.
- Work primarily in a kitchen environment exposed to heat, humidity, steam, noise, and food odors; occasional outdoor exposure when moving between camp areas.
- Physical demands include extended standing and walking, frequent bending and twisting, lifting and moving items up to 50 pounds, and manual handling of hot pans, utensils and supplies.
- Occasional work in hot (>100 °F/38 °C) or cold (<32 °F/0 °C) storage areas and on slippery surfaces; risk of minor cuts or burns when handling kitchen equipment.
- Travel to and from remote sites by road, river and/or air as required.
