Head Chef - Sports & Leisure Complex

A dynamic sports and leisure facility based in Lilongwe, Malawi is searching for an experienced Head Chef to direct the daily operations of its full-service restaurant and hospitality department. The position oversees culinary strategy, standardises menu execution, and drives team efficiency to cater to active patrons, families, and event guests.

Working hours consist of standard operational restaurant shifts, totaling 44 hours per week across operational days, including evenings, weekends, and public holidays.

Key Responsibilities:

• Direct daily kitchen operations, food preparation, and plating to guarantee consistent culinary presentation and output quality.
  
• Create and cost balanced menus and daily specials tailored to an active leisure and sporting community.
  
• Supervise, mentor, and schedule kitchen staff to cultivate an efficient, clean, and collaborative working environment.
  
• Manage candidate recruitment, interviewing, and onboarding for Assistant and Sous Chef positions.
  
• Oversee stock levels, supplier orders, and inventory audits to control food costs and minimise operational waste.
  
• Enforce strict hygiene, sanitation, and safety protocols across all storage and preparation zones.
  
• Partner with venue management to coordinate catering for events, private functions, and peak usage periods.
