This is a rare chance to step into a senior culinary leadership role at one of Melbourne’s most exciting newly opened hospitality venues, The Saint Hotel.

This role plays a key part in refining standards, leading the team and continuing to shape the culinary direction of The Saint Hotel. Working closely with our senior leadership team, you'll play a pivotal role in driving quality, consistency and performance across all kitchen operations.

What You’ll Do

As part of our senior kitchen leadership team, you will:

  • Lead and oversee day-to-day kitchen operations

  • Deliver consistent, high-quality food across all services

  • Refine and execute menus in line with the venue's direction

  • Train, mentor and manage kitchen team performance

  • Maintain exceptional food safety, hygiene and Work Health and Safety (WHS) standards

  • Manage stock control, ordering, wastage and food costs

  • Oversee prep planning, service flow and kitchen organisation

  • Build a positive, motivated and professional kitchen culture


About You

You’re an experienced, hands‑on kitchen leader who leads by example. You take pride in both people development and operational excellence. You’ll also bring:

  • 5+ years experience in professional commercial kitchens

  • Proven experience as a Sous Chef of Head Chef

  • Strong leadership and communication skills

  • A calm, structured approach under pressure

  • A sound understanding of Australia food safety and WHS requirements

  • Availability across nights, weekends and rotating rosters
