· Improving the accuracy of monthly inventory operations
Instructing on the operation of monthly inventory for each location, working to reduce waste, and creating and updating training manuals
Instructing on appropriate inventory management, and implementing appropriate plans for consuming excess and expiring products
·Proposing changes to production plans and order quantities to improve stock-out situations at each store
Reviewing production plans for kitchen-manufactured products
Proposing revisions to order quantities for vendors and central kitchens
·Improving promotion of sales-enhancing products
Instructing on how to use POP signs, product display quantities, and facings to improve performance
Implement promotional activities to increase customer awareness and appeal of imported products from Japan and monthly strategic products
·Plan and promote new store openings and renovation of existing stores
Propose new store openings and renovation of existing stores related to the sushi and fish products you are in charge of, and manage the progress of the plans
Provide training and support to acquire human resources' skills
Create manuals for education and update them as necessary
Comprehensively select fixtures, equipment, and procured products, manage schedules, and manage project progress
·Support MDD-Section Manager's work
Express Japanese ingredients, Japanese cooking, Japanese trends, and Japanese quality, which are the core of Japan Specialty Store, in the store
Instruct and support Section Manager to strengthen purchasing, product creation, and POP sign development
·Explore demand by store
By focusing on communication and collaboration with stores, grasp potential demand for products by store and use it for MDPLAN and item changes and discontinuations

ESSENTIAL DUTIES

Store Operations & Training
· Conduct regular visits to assigned stores to observe and evaluate Delica kitchen operations.
· Train and coach store side Department Leaders, Assistant Department Leaders, and Store Associates on proper production procedures and best practices.
· Ensure all products are prepared according to approved recipes, specifications, presentation standards, and food safety requirements.
· Verify that associates are following proper portion control, cooking procedures, packaging standards, and labeling requirements.
· Identify skill gaps and provide hands-on training to improve associate performance and operational consistency.
· Support newly hired associates and management teams through structured onboarding and operational training.
Production & Quality Control
· Monitor daily production activities to ensure products are produced efficiently while maintaining company quality standards.
· Analyze kitchen workflow and recommend improvements to increase productivity and reduce waste.
· Verify product freshness, quality, appearance, and shelf-life standards.
· Ensure accurate execution of promotional items, seasonal products, and new product launches.
· Assist stores in developing production plans that align with sales projections and customer demand.
· Review shrink, waste, and production yields and recommend corrective actions when necessary.
Food Safety & Compliance
· Ensure compliance with all company food safety standards, sanitation procedures, and local health regulations.
· Conduct food safety audits and operational assessments during store visits.
· Verify proper receiving, storage, preparation, temperature controls, and inventory rotation practices.
· Ensure associates maintain a clean, organized, and safe work environment.
· Provide corrective coaching and follow-up training when food safety or operational deficiencies are identified.
Business Performance
· Support assigned stores in achieving sales, gross profit, labor, and shrink targets to achieve budget goal
· Review operational performance metrics and identify opportunities for improvement.
· Assist Department Managers in implementing action plans to improve productivity and profitability.
· Partner with store leadership to develop strong, high-performing Delica teams.
Store Development Support
· Assist with grand openings, remodels, store acquisitions, and Delica department expansions.
· Support implementation of operational procedures, equipment utilization, and production standards.
· Help establish training materials, operational guidelines, and best practices for assigned stores.
Additional Duties
· Travel regularly between assigned locations to support operations and training needs.
· Perform additional duties as assigned by the Department Manager or Division leadership.

· Minimum of three (3) years of experience in Delica, Deli, Sushi, Bakery, or related food service operations.
· Experience training employees and leading kitchen operations required.
· Experience with inventory management, production planning, and food safety compliance required.
· Multi-unit, field support, or supervisory experience preferred.
