Outlet Manager (Restaurant Opening & Operations)
About the Role
We are looking for an experienced Outlet Manager to take full ownership of the daily operations, business performance, customer experience, team, and food-safety compliance of our Singapore outlet. You will run the outlet end to end — from opening and peak-hour execution to closing — while leading the team and delivering on the outlet’s operational and commercial targets.
This role suits a strong, hands-on operator who is comfortable owning results, working on the floor during peak periods, and using operational data to improve performance.
Key Responsibilities
Outlet Operations
- Support site selection and location assessment — evaluate footfall, catchment, unit layout, and F&B suitability
- Coordinate the fit-out / renovation process end to end — work with designers, contractors, and vendors through handover from bare condition
- Follow through on M&E requirements (power, exhaust, gas, water, grease trap) and liaise with mall management and relevant authorities on licensing and inspections
- Plan and execute pre-opening — equipment installation, kitchen setup, staff hiring and training, soft launch, and opening-day readiness
- Set up the outlet's SOPs, rosters, inventory, and POS systems from scratch
- Own daily opening, service, peak-hour execution, closing, cleaning, and handover routines
- Maintain product quality, service consistency, queue management, speed of service, hygiene, and brand standards
- Implement company SOPs and ensure consistent execution across all shifts
- Coordinate with mall / building management, suppliers, contractors, delivery platforms, and internal support teams
- Support new-outlet setup and pre-opening where required — fit-out follow-up, equipment installation, soft-launch preparation, staff training, and opening checks
- Be accountable for outlet sales, labour efficiency, cost of goods, wastage, inventory, and controllable expenses
- Review sales, footfall, average spend, delivery-channel performance, scheduling efficiency, and stock variance on a daily and weekly basis
- Execute local store marketing, mall activities, sampling, and promotions in line with company plans
- Propose improvements based on operational data and on-the-ground observations
Team Management
- Lead recruitment support, onboarding, training, scheduling, coaching, and supervision of outlet staff and shift supervisors
- Build a service-oriented, high-execution team culture
- Plan shifts fairly, publish rosters at least two weeks in advance where possible, and ensure adequate rest days
- Handle performance feedback, shift discipline, and escalations professionally
Food Safety, Hygiene & Workplace Safety
- Ensure compliance with Singapore Food Agency (SFA) requirements, hygiene standards, licensing conditions, and cleaning / sanitation procedures
- Maintain inspection readiness — temperature logs, cleaning records, pest control, food storage, labelling, and shelf-life management
- Ensure food handlers complete the applicable Food Safety Course and internal training
- Maintain a safe working environment and manage risks such as burns, slips, equipment faults, and peak-hour crowding
Inventory & Supplier Management
• Manage ordering, receiving, FIFO, safety stock, stock-takes, wastage records, and inventory reconciliation
• Check supplier deliveries for quality, quantity, and documentation
• Report product-quality, stock, equipment, and supply issues promptly
Requirements
- Minimum 3–5 years in F&B / restaurant management, including hands-on experience opening at least one outlet from scratch (site evaluation, fit-out, pre-opening, and launch)
- Familiar with the restaurant setup process in Singapore — renovation, M&E coordination, SFA licensing, and SCDF fire-safety requirements
- Proven ability to run ongoing daily operations after opening — sales, cost control, team, and compliance
- Experience managing frontline staff and owning full outlet daily operations (not a single shift)
- Working knowledge of rostering, inventory, POS, service standards, and outlet performance metrics
- Able to work rotating shifts, weekends, public holidays, and peak trading periods
- Strong communication, coaching, execution, problem-solving, and on-the-spot judgement
- Legally authorised to work in Singapore
- Food Safety Course Level 1 (or higher) preferred; to be completed after joining if not already held
