The Pastry Commis/Demi Chef is responsible for supporting the Senior Pastry Chef in the daily preparation and production of pastries, desserts, and other pastry products while maintaining high standards of quality, consistency, presentation, and food safety. The role is expected to ensure that all mise en place is properly prepared, ingredients are handled and stored correctly, and the pastry section is kept clean, organised, and hygienic at all times.

Day-to-day responsibilities:

  • Prepare daily mise en place and assist with pastry and dessert production according to recipes and standards.
  • Ensure proper handling, storage, and temperature control of all food products in accordance with food safety and hygiene standards.
  • Assist the Senior Pastry Chef in preparing, decorating, and presenting pastries, cakes, desserts, and other pastry products to the required quality and presentation standards.
  • Maintain consistent quality, taste, texture, and presentation across all pastry and dessert offerings.
  • Coordinate with the kitchen team to ensure smooth and timely food production, taking into consideration special requests, dietary requirements, and food allergies.
  • Maintain a clean, organized, and hygienic work area at all times, and ensure the pastry section is properly cleaned and maintained at the end of each shift.
  • Monitor and maintain adequate stock levels of pastry ingredients and supplies, and assist with regular inventory checks and stocktaking.
  • Follow all established recipes, preparation methods, portion controls, and standard operating procedures to ensure consistency and minimize wastage.
  • Assist with receiving, checking, and storing pastry ingredients and supplies in accordance with food safety and storage requirements.
  • Support the Senior Pastry Chef and kitchen team in maintaining smooth daily operations.
  • Perform any other duties and responsibilities as assigned by the Senior Pastry Chef or management.

Knowledge, Skills and Qualifications:

  • Minimum 2–3 years of relevant pastry or kitchen experience, preferably in a hotel, fine dining, or high-volume restaurant environment.
  • Basic knowledge of pastry preparation techniques, ingredients, equipment, food handling, and kitchen procedures.
  • Good understanding of food hygiene, food safety, and proper food storage and handling practices.
  • Good organizational and time-management skills, with the ability to manage multiple tasks and work effectively under pressure.
  • Good attention to detail with a strong commitment to maintaining food quality, consistency, and presentation standards.
  • Able to communicate professionally and work effectively with the Senior Pastry Chef, kitchen team, and other departments.
  • Demonstrates a positive attitude, teamwork, willingness to learn, and ability to adapt to changing operational requirements.
