Processing Technician I
SUMMARY
Under the direction of the Processing Supervisor, processes all raw and smoked products.
ESSENTIAL DUTIES AND RESPONSIBILITIES
- Completes all start-up and shut-down procedures for all processing areas.
- Grinds, blends, and final grinds all raw materials to be used in processing.
- Loads and unloads, cooks and records weights for smokehouse.
- Completes required forms and properly applies thermometers and probes.
- Understands the procedures for hanging smoked meats.
- Assembles Weiler grinder and mixer/blender on a daily basis for processing.

Weighs all materials according to each product specific formulation with no underweights and
+1 pound max overweight and documents on each product specific batch card.
- Weighs spices and water and documents on batch cards according to each ground batch
- Understands the mixing and grinding procedure to prepare the product for stuffing.
- Observes product appearance and changes plate or knives accordingly.
- Understands smokehouse operations which include start-up, weights and loading of wood, placing of thermometer probes, checking each cycle and documentation.
- Adheres to all HACCP requirements for all CCP’s and correctly completing all required forms.
- Washes, scrubs and sanitizes machines and all areas according to sanitation schedule.
- Observes safety and security standards.
