Production - Harvest

These positions entail the process of breaking down the animal carcass. This includes removing the hide, viscera, and head. It also includes trimming all contamination from the carcass after harvest. Equipment used includes various machinery, knives, and hands. The environment for this position is warm to hot (80°-100° F).
