Purchaser / Procurement Manager

Role purpose

The Purchaser is responsible for centralising purchasing across BMG's hotels and Gabriel Restaurant, obtaining competitive pricing while maintaining required quality, availability and control.

Although the job title can remain Purchaser, it should be recruited at management level because the position will manage supplier relationships, purchasing controls, cost comparisons and procurement strategy across multiple sites.

Key responsibilities

• Manage central procurement for hotels and restaurant operations.
• Source suppliers and obtain quotations.
• Negotiate pricing, credit terms, delivery conditions and contracts.
• Maintain an approved supplier database.
• Conduct price comparisons and tender exercises where appropriate.
• Coordinate purchase requisitions and purchase orders.
• Ensure purchases follow authorised budgets and approval procedures.
• Monitor supplier performance.
• Maintain records of quotations, agreements and purchasing decisions.
• Work closely with the Head Chef on food purchasing.
• Work with Hotel Operations on housekeeping, amenities, maintenance and operating supplies.
• Coordinate CAPEX and pre-opening procurement where required.
• Monitor stock levels and reorder requirements.
• Identify abnormal price movements.
• Reduce duplicate or unnecessary purchasing.
• Develop alternative suppliers to reduce supply-chain risk.
• Work with Finance on three-way matching between PO, delivery and invoice.
• Use AI agents for quotation comparison, spend analysis, supplier benchmarking, reorder forecasting and contract summarisation.
• Maintain human approval for commercial commitments and supplier appointments.
• Prepare monthly procurement savings and supplier-performance reports.

Candidate profile

• Procurement, purchasing, supply chain, hospitality or F&B experience.
• Strong negotiation skills.
• Commercially minded and highly organised.
• Comfortable managing multiple suppliers and multiple operating locations.
• Strong spreadsheet skills.
• Comfortable using cloud procurement systems and AI-assisted analysis.
• High integrity due to the commercial and supplier-facing nature of the position
