Procurement Manager – F&B / Restaurant
Job Summary
The Procurement Manager is responsible for sourcing and purchasing food ingredients, beverages, equipment, and operational supplies for the restaurant. The role requires strong supplier sourcing capabilities, particularly in China, to ensure competitive pricing, consistent quality, and reliable supply.
Key Responsibilities
Supplier Sourcing: Identify, evaluate, and develop reliable suppliers for food ingredients, beverages, equipment, and restaurant supplies.
China Procurement: Source suitable products and suppliers from different regions of China based on the restaurant's operational and product requirements.
Supplier Network Development: Leverage and expand an established network of manufacturers, wholesalers, distributors, and food-related suppliers in China.
Overseas Sourcing: Travel to China when required to identify new suppliers, visit factories or production facilities, evaluate products, and negotiate commercial terms.
Procurement Management: Manage purchasing activities and ensure timely availability of required goods.
Price Negotiation: Negotiate pricing, minimum order quantities, payment terms, delivery arrangements, and other commercial terms with suppliers.
Quality Control: Evaluate products and suppliers to ensure purchased goods meet the company's required quality and food safety standards.
Inventory Planning: Coordinate with the kitchen and operations teams to maintain appropriate stock levels and minimise shortages and wastage.
Supplier Management: Monitor supplier performance, product quality, pricing, and delivery reliability.
Supply Chain Coordination: Coordinate purchasing and delivery schedules and resolve supply shortages or delays.
Market Research: Monitor product trends, ingredient prices, and new sourcing opportunities in Singapore and China.
Documentation: Maintain proper supplier quotations, purchase orders, invoices, contracts, and procurement records.
Internal Coordination: Work closely with the Head Chef, Operations Manager, Finance team, and management on purchasing requirements and budgets.
Management Reporting: Prepare procurement, cost-saving, supplier performance, and sourcing reports for management.
Requirements
Diploma or Degree in Supply Chain, Procurement, Business, Hospitality, or related field preferred.
Relevant procurement or purchasing experience, preferably in F&B, hospitality, food distribution, or food trading.
Must have an established supplier and business network in China.
Strong knowledge and experience in sourcing and negotiating with China-based suppliers.
Able and willing to travel regularly to China for supplier sourcing, negotiations, product evaluation, and supplier visits.
Good understanding of food ingredients, F&B supplies, pricing, and inventory management.
Strong negotiation, communication, and supplier-management skills.
Good numerical and cost-analysis abilities.
Proficient in Microsoft Excel and purchasing/inventory systems.
Organised, resourceful, and able to work independently across Singapore and China procurement activities.
