RESTAURANT MANAGER
ABOUT TANOKE
Located within a conserved heritage shophouse on Purvis Street, TANOKE is a modern Japanese restaurant and sake bar offering contemporary Japanese cuisine, thoughtfully curated sake and warm hospitality.
With expansion plans in the pipeline, we are looking to grow our team. We are seeking a hands-on Restaurant Manager who can lead our service team, oversee daily operations and contribute to the restaurant’s financial planning and performance.
KEY RESPONSIBILITIES
• Take responsibility for the restaurant’s daily front-of-house operations
• Lead, train and motivate the service team
• Plan staff rosters, deployment and manpower requirements
• Maintain consistent service and guest-experience standards
• Oversee reservations, table arrangements and guest requests
• Coordinate private events, corporate bookings and special occasions
• Handle guest feedback and service recovery professionally
• Manage inventory, stocktaking, ordering and cost control
• Oversee opening, closing and cash-management procedures
• Participate in the preparation of operational budgets and financial forecasts
• Monitor revenue, labour costs, beverage costs and other operating expenses against budget
• Review sales and operational performance and recommend measures to improve revenue, productivity and profitability
• Assist management in setting sales targets and controlling departmental expenditure
• Prepare regular operational and financial reports using Microsoft Excel
• Update menus and event materials using Canva when required
• Ensure compliance with cleanliness, safety and regulatory requirements
• Work closely with the kitchen and senior management teams
• Identify operational challenges and implement practical improvements
• Take initiative and make sound operational decisions without requiring constant direction
REQUIREMENTS
• At least 3 years of relevant restaurant operations and management experience
• Experience with budgeting, cost control and operational reporting
• Good understanding of restaurant revenue, labour costs and operating expenses
• Proven experience leading and developing a service team
• Proficient in spoken and written English, as the role requires communication with guests, team members and corporate clients
• Proficient in Microsoft Excel and comfortable using Canva
• Proactive, hands-on and solutions-focused
• Positive mindset and professional attitude
• Strong leadership, communication and organisational skills
• Good commercial awareness and attention to operational costs
• Able to remain composed and make decisions during busy service periods
• Comfortable working split shifts, evenings, weekends and public holidays
• Able to support extended working hours during peak periods and private events
• Able to commit to a minimum 44-hour work week
• Immediate availability is preferred
