JOB SUMMARY

The Restaurant Sales Manager is responsible for generating, booking, and executing all large-party, private dining, and group reservation business across all restaurants at Rio Mar Resort — including Amaya, Palio, Iguana, Roots, Aura, Cabana Dinners, The Vault, and other resort outlets. This role owns the full sales cycle — from prospecting and lead response through contract negotiation, event planning, and day-of execution — and serves as the primary point of contact for guests hosting parties, corporate events, holiday gatherings, and other group dining experiences at any of the resort's restaurants. The ideal candidate combines a hospitality-first mindset with strong sales instincts, meticulous organization, and the ability to build lasting relationships with repeat and referral clients

EDUCATION & EXPERIENCE

  • Bachelor's degree in architecture, Structural Engineering, or a related field.
  • 2+ years of experience in restaurant events, banquet/catering sales, hospitality sales, or a related field required.
  • Proven track record of meeting or exceeding sales targets.
  • Highly organized and detail-oriented, with the ability to manage multiple bookings and deadlines simultaneously.
  • Proficiency with reservation/CRM and POS systems (e.g., OpenTable, Tock, Resy), and Microsoft/Google Office applications.
  • Working knowledge of food, beverage, and service standards; banquet or catering operations experience a plus.
  • Current food handler and responsible alcohol service certification as required by local/state law (e.g., ServSafe, TIPS), or ability to obtain within 30 days of hire.
  • Comfortable monitoring and responding to inquiries via mobile device outside of standard desk hours to meet the role's lead-response time standards.

    Preferred Qualifications
  • Hospitality experience, particularly within a 5-star resort or similar luxury environment

FUNDAMENTAL REQUIREMENTS

  • Find new corporate clients, tour groups, and local event planners to build a steady pipeline of group reservations.
  • Respond to all new catering, private event, and large-party leads within 5 minutes during business hours whenever possible, and within 1 hour at the absolute latest — speed of response is one of the strongest predictors of whether a lead converts.
  • Maintain an instant auto-reply (text and/or email) that confirms receipt of every inquiry and sets clear expectations for when a personal follow-up will follow.
  • Keep standard packages, pricing sheets, and private dining menus ready as quick-reference templates so inquiries can be answered with actionable details immediately.
  • Ensure website contact forms and event software route new inquiries directly to the Restaurant Sales Manager's mobile device to eliminate desk-bound delays.
  • Follow up consistently on every lead through to close.
  • Track sales metrics, pipeline activity, and conversion rates, and meet or exceed the annual sales target for group and large-party business — $200,000–$250,000 in contracted F&B revenue for next year.
  • Build and maintain relationships with corporate accounts, event planners, and repeat clients to drive referral business.
  • Curate and maintain a catalog of upsell enhancements — live entertainment, floral arrangements for tables, live-action food stations, premium bar packages, custom cakes/desserts, AV, and similar add-ons — to increase average event value and help meet sales targets.
  • Serve as the main point of contact for inquiries, conduct venue walkthroughs, and present custom food and beverage packages.
  • Guide clients through menu and beverage selections, pricing, and curated upsell options such as live entertainment, floral arrangements, and live-action stations.
  • Resolve client questions or concerns promptly and professionally throughout planning and during the event.
  • Draft event contracts and negotiate pricing, spending minimums, deposits, and cancellation terms in line with house policy.
  • Create detailed Restaurant Event Orders (REOs) outlining menu, beverage, room setup, timing, staffing, and special requests, and distribute them to the kitchen and floor teams and General Managers.
  • Print all specialty menus for each REO as requested by the group, along with any additional materials requested by the client.
  • Collect deposits, manage invoicing, and oversee final billing and payment collection for all booked events.
  • Maintain accurate records of bookings, contracts, and client communications in the reservation/CRM system.
  • Work closely with the executive chef, general manager, and assistant F&B director to fulfill custom menu requests and staffing needs for each event.
  • Coordinate logistics with the kitchen, bar, and floor/service staff at each restaurant to ensure accurate execution of every REO.
  • Manage the group and event booking calendar across all resort restaurants to prevent conflicts and optimize revenue across available dates, shifts, and venues.
  • Oversee large-scale parties on-site or ensure a smooth handoff to the restaurant operations team for flawless service.
  • Be present or on-call for large events to troubleshoot issues in real time.
  • Ensure all events comply with responsible alcohol service laws and restaurant safety and operational policies.
  • Partner with marketing teams to design seasonal holiday packages, private dining brochures, and promotional campaigns.
  • Contribute to private-event proposals, materials, and collateral across print, digital, and social channels.
  • Monitor competitor offerings and local market trends to keep packages and pricing competitive.
  • The duties and responsibilities outlined above are representative of the position and are not intended to be an exhaustive list of all functions performed.
  • Perform other duties as requested by management.

PHYSICAL REQUIREMENTS

  • Ability to stand, walk, and patrol the property for extended periods, including stairs
  • Ability to lift, carry, push, or pull up to 25-50 lbs
  • Ability to work varying shifts, including nights, weekends, and holidays, and remain alert during overnight shifts
