Sushi Chef - BOH

We’re looking for an experienced, detail-oriented Sushi Chef who is passionate about quality food, exceptional presentation, and memorable guest experiences.


You’re someone who takes pride in your craft, works with precision, and maintains high standards even during the busiest service periods. You thrive in a fast-paced, high-volume restaurant environment and can balance speed, quality, consistency, food safety, and guest service.

What You’ll Do

  • Prepare sushi rolls, nigiri, sashimi, and specialty dishes according to company recipes and presentation standards.
  • Use knives and other kitchen equipment safely and skillfully to portion and prepare ingredients.
  • Maintain consistency in flavor, quality, portioning, freshness, and presentation.
  • Inspect ingredients before use and promptly report quality or food-safety concerns.
  • Properly store, label, date, and rotate ingredients following FIFO procedures.
  • Maintain a clean, organized, and fully stocked sushi station throughout each shift.
  • Follow all sanitation, food-handling, allergen-awareness, and workplace-safety requirements.
  • Provide welcoming and knowledgeable service to guests seated at or interacting with the sushi bar.
  • Answer guest questions regarding menu items and communicate allergy or dietary requests appropriately.
  • Collaborate with kitchen and front-of-house teams to maintain smooth service and accurate order execution.
  • Monitor inventory, restock supplies, and assist with prep work and opening or closing responsibilities.
  • Minimize food waste by following recipes, portion standards, and proper storage procedures.
  • Support the training and development of new sushi employees as assigned.

  • Perform other related duties and support business needs as assigned.

What You Bring

  • One to three years of professional sushi preparation experience is preferred.
  • Experience preparing sushi rolls, nigiri, sashimi, and specialty dishes.
  • Strong knife skills and knowledge of sushi-preparation techniques.
  • Understanding of food safety, sanitation, cross-contamination prevention, allergen awareness, and FIFO procedures.
  • Ability to work efficiently and consistently in a fast-paced, high-volume environment.
  • Strong attention to detail and commitment to quality presentation.
  • Ability to provide friendly, professional service in a guest-facing environment.
  • Positive attitude with strong teamwork and communication skills.
  • Ability to follow recipes, portion standards, and preparation procedures.
  • Ability to work independently while communicating effectively with the restaurant team.
  • Ability to work evenings, weekends, holidays, and variable shifts based on business needs.
  • Washington State Food Worker Card required or must be obtained within 14 days of beginning work.
