Job Summary
As a sushi chef in a Japanese restaurant, you will handle raw fish and ingredients, manage food stock, and ensure all orders meet quality standards with attention to detail.
Responsibilities
- Cut, slice, and fillet various fish types precisely to prepare sushi dishes that meet quality and presentation standards
- Inspect fruits, vegetables, and fish for freshness and suitability for sushi preparation
- Prepare sushi dishes following portion, presentation, and food safety guidelines
- Maintain a clean and sanitary work area to prevent contamination and comply with hygiene standards
- Take regular inventory of food supplies and ingredients to manage stock and minimize waste
- Report kitchen equipment issues promptly to the executive chef to avoid disruptions
- Sterilize utensils, instruments, and equipment before use to uphold food safety standards
- Communicate clearly with wait staff to accommodate special requests and allergy considerations
- Engage customers to provide information and enhance their dining experience
- Create new sushi items using fresh daily ingredients to support menu variety and innovation
Preferred competencies and qualifications
- Collaborate effectively with team members and deliver excellent customer service through strong interpersonal skills
- Support colleagues and work efficiently in a fast-paced kitchen environment
- Knowledge of Japanese language to communicate with suppliers in Japan, aiding supplier coordination
- Minimum of 5 years’ experience in a similar sushi chef role
