We are seeking a Sushi Chef to join our team. As a key member of the Eau Resort & Spa team, you will play an essential role in delivering exceptional service to our guests, upholding the standards of our Forbes Five-Star resort.
Role Summary:
The Sushi Chef(s) will be responsible for planning, prepping, setting up and providing quality service in all areas of food production for menu items and specials in the designated outlets in accordance with standards and plating guide specifications. The ideal candidate should be capable of directing, training and monitoring performance of Line Cooks, while maintaining organization, cleanliness and sanitation of works areas and equipment.
We have a Full-Time position available.
This role is a flexible position (AM / PM), and all candidates must be able to work weekends, holidays, and nights.
This role is designated for our Nobu Manalapan Culinary department.
Essential Qualifications:
- At least 2 years of sushi bar working experience in high-volume cooking.
- Extensive knowledge of sushi preparation, techniques, and kitchen equipment.
- Strong knowledge of Japanese seafood, fish, products, and terminology.
- Ability to work in a high-pressure environment.
- Knowledge of weights, measures, and recipe yields.
- Advanced knife skills.
- Excellent customer service and communication skills.
- Ability to effectively and clearly communicate (written and verbal) with guests, management and co-workers to ensure mutual understanding.

- Ability to perform job functions with attention to detail, speed and accuracy.
- Ability to prioritize, organizes, delegate work and follow through.
- Ability to be a clear thinker, remain calm and resolve problems using good judgment.
- Ability to work well under pressure of meeting production schedules and timelines for guests’ orders.
- Ability to work from a standing position for extended periods of time.
- Ability to perform physical tasks, including lifting and transporting items of varying weights, with or without accommodation.
- Ability to perform reaching, stooping, and/or crouching motions repeatedly.
