The Sushi Cook is responsible for the preparation, presentation, and execution of high-quality sushi, sashimi, rolls, and other Japanese-inspired menu offerings for both restaurant service and large-scale banquet, convention, and catering events. This position supports the culinary team in delivering exceptional guest experiences while maintaining the highest standards of food quality, consistency, safety, and presentation in a fast-paced, high-volume hospitality environment.
In addition to à la carte restaurant service, the Sushi Cook plays a key role in preparing and executing sushi offerings for large conventions, VIP functions, receptions, and special events throughout the hotel.
What You’ll Do
- Prepare sushi, sashimi, rolls, and related menu items according to established recipes and standards
- Ensure food quality, freshness, and presentation meet Hyatt brand expectations
- Safely handle and store seafood and ingredients following food safety guidelines
- Set up and maintain the sushi station for service, ensuring cleanliness and organization
- Maintain proper knife care and workstation sanitation
- Communicate effectively with kitchen leadership and front‑of‑house teams
- Assist with inventory, prep work, and restocking as needed
- Follow all health, safety, and sanitation regulations
- Support a collaborative, team‑oriented kitchen environment
