About the Company
Halse Lodge is a heritage-listed
guesthouse and backpackers set in the rainforest above Noosa Main Beach, built
in the 1880s and listed by the National Trust of Australia (Queensland).
Alongside dormitory, double and private suite accommodation, we run a licensed
bar and restaurant on the ground floor that trades to the general public as
well as to our house guests, with a regular entertainment programme and a busy
functions calendar. The property reopened after a full restoration and is now
one of the most recognisable venues in Noosa.
About the Role
This is a senior, whole-of-venue
role reporting directly to the General Manager. You will lead the accommodation
and front of house operation across guest services, housekeeping, bar and food
and beverage floor service, with five supervisors and around twenty staff
reporting to you. You will also be our day-to-day point of contact for the
contracted kitchen operator, coordinating service and reviewing menu and
pricing proposals. It suits someone who is equally comfortable behind the
reception desk, on the floor during a Friday night service, and in front of a P
and L on Monday morning.
Key Responsibilities
• Lead the day-to-day operation of the guesthouse and the
licensed venue, reporting to the General Manager
• Supervise, develop and support the guest services,
housekeeping, bar and food and beverage supervisors and their teams
• Oversee reservations, check-in and check-out, guest
communication and the resolution of guest complaints
• Maintain housekeeping and presentation standards, room
readiness, linen and guest supplies across all room types
• Prepare and manage rosters across accommodation and
front of house, controlling labour cost against budget
• Oversee bar operations including stock control,
ordering, monthly stocktakes and beverage cost management
• Manage food and beverage service on the floor and
coordinate service timing with the contracted kitchen operator
• Review and approve menu and pricing proposals in
conjunction with the General Manager
• Monitor departmental revenue, occupancy, cost and
margin, and report on performance at weekly management meetings
• Maintain compliance with the Liquor Act, responsible
service of alcohol requirements, food safety and work health and safety
obligations
• Recruit, induct and train new accommodation and front
of house staff
• Coordinate functions, events, group bookings and the
venue promotions calendar
Skills
• Lead and motivate a team across more than one
department, including supervisory staff
• Build and manage rosters and control labour cost
against budget
• Operate property management and point of sale systems
confidently
• Control stock, place supplier orders and complete
accurate stocktakes
• Resolve guest complaints calmly and bring them to a
satisfactory outcome
• Apply liquor licensing, responsible service of alcohol
and food safety requirements in practice
• Communicate clearly with staff, guests, suppliers and
contractors
• Read revenue, occupancy and cost reports and act on
what they show
Experience
• At least two years in a hospitality management or
senior supervisory role
• Demonstrated experience in licensed food and beverage
operations
• Experience managing rosters, stock control and cost
management
• Exposure to accommodation, guest services or
housekeeping operations
• Experience in a high-volume or seasonal tourism
environment (desirable)
Qualifications
• Diploma of Hospitality Management or higher, or
equivalent demonstrated experience
• Current Queensland Responsible Service of Alcohol (RSA)
certificate
• Approved Manager Licence under the Liquor Act, or
willingness to obtain one (desirable)
