Assistant Outlet Manager - Gami (Pre-Opening) - Conrad Kuala Lumpur
As the Assistant Outlet Manager - Gami, you will be responsible for performing the following tasks to the highest standards:
Maintain a strong customer service focus and ensure every guest receives warm, attentive, and personalized service.
Support the delivery of Japanese hospitality (Omotenashi) and create a memorable teppanyaki dining experience.
Be visible and actively assist on the floor during peak service periods, busy days, special events, and celebrations.
Proactively anticipate guest needs and coach team members to identify and respond to guest requirements before being asked.
Handle guest requests, feedback, and complaints promptly and professionally, escalating matters to the Outlet Manager when required.
Actively seek feedback from guests and team members and support the implementation of improvements.
Ensure VIP guests, regular guests, celebrations, group bookings, and special requests receive appropriate attention.
Support the Outlet Manager in planning, organizing, and controlling the day-to-day operation of Gami Teppan.
Assist in preparing staff rosters and job schedules according to reservations, business levels, events, promotions, and operational requirements.
Conduct pre-shift briefings and ensure effective communication of reservations, VIPs, special occasions, promotions, menu updates, and service priorities.
Ensure proper shift handovers and clear communication between team members and management.
Assist in ensuring the restaurant, teppanyaki counters, dining areas, service stations, and semi-private rooms are clean, organized, and ready for service.
Ensure adequate manpower, equipment, tableware, and operational resources are available for each service period.
Participate actively in service and take appropriate action to ensure smooth operations.
Coordinate with Housekeeping, Engineering, Stewarding, and other departments to follow up on operational and maintenance requirements.
Maintain event and function histories to support repeat business and future bookings.
Maintain good knowledge of Japanese cuisine, teppanyaki cooking, menu items, ingredients, sauces, beverages, and recommended pairings.
Ensure team members are confident in explaining the menu, Japanese ingredients, preparation methods, and teppanyaki dining concept to guests.
Work closely with the Teppanyaki Chefs and Kitchen team to ensure smooth coordination between cooking and table service.
Communicate guest allergies, dietary requirements, special requests, and preferences clearly to the Chef team.
Ensure the team follows the appropriate service sequence, dining etiquette, and standards expected of Gami Teppan.
Keep the team informed of menu changes, seasonal offerings, chef recommendations, and unavailable items.
Assist the Outlet Manager in leading, coaching, motivating, and developing the restaurant team.
Allocate and delegate duties effectively to ensure smooth service and appropriate coverage.
Conduct regular training on service standards, Japanese hospitality, menu knowledge, upselling, hygiene, and operational procedures.
Monitor team members’ performance and provide coaching and constructive feedback.
Assist with recruitment, interviews, onboarding, orientation, and development of new team members.
Ensure new team members receive the necessary information and training before performing their duties independently.
Assist in maintaining the outlet’s training and orientation materials.
Create a positive team environment that encourages teamwork, communication, accountability, and initiative.
Keep team members updated on restaurant activities, promotions, business priorities, and operational changes.
Support the Outlet Manager in achieving the restaurant’s sales, revenue, and profitability targets.
Create a culture where “everyone sells” by encouraging team members to recommend suitable dishes, premium ingredients, beverages, desserts, and special dining experiences.
Monitor upselling and cross-selling practices and provide coaching where required.
Identify opportunities for additional revenue through celebrations, semi-private dining, group bookings, promotions, and special events.
Assist with identifying and communicating potential sales leads.
Follow company control procedures and assist in controlling operating costs without compromising quality or service standards.
Monitor food and beverage wastage and support appropriate cost-control measures.
Assist with inventory management, stock ordering, receiving, storage, and stock control.
Assist the Outlet Manager with financial, operational, and administrative reports and record-keeping.
Ensure the health, safety, and wellbeing of guests and team members.
Ensure compliance with food safety, hygiene, health & safety, and company policies.
Ensure safe working practices are followed, particularly around hot teppanyaki surfaces, open flames, sharp equipment, and cooking equipment.
Monitor cleanliness, sanitation, food handling, and workplace safety standards.
Report and follow up on any unsafe conditions, equipment issues, or hygiene concerns promptly.
Maintain effective communication with the Outlet Manager, Teppanyaki Chefs, Kitchen team, and other hotel departments.
Support the Outlet Manager in achieving departmental goals and communicating clear direction to the team.
Contribute ideas and suggestions to improve guest experience, service standards, operational efficiency, and sustainability.
Assist with restaurant promotions, events, special dining experiences, and promotional materials.
Participate in F&B meetings, briefings, training sessions, and operational discussions.
Maintain a professional presence and lead by example at all times.
Carry out any other reasonable duties and responsibilities as assigned by Management.

2-4 years in a managerial position in a luxury hotel or international chain hotel.
Good English skills, both written and verbal to meet business needs.
Familiar with computer systems and knowledge of POS systems, inventory control.
