Position Overview
The Kitchen Custodian is responsible for maintaining a clean and tidy kitchen, including dishwashing, storage of dishes, utensils, and other kitchen equipment, and other cleaning.
Essential Functions
Reasonable accommodations may be made to enable individuals with disabilities to perform the essential functions.
- Operate and maintain the dishwashing area, ensuring dishes do not accumulate and monitoring the cleanliness of items exiting the dish machine.
- Clean, sanitize, and properly store all dishes, utensils, pots, pans, and kitchen equipment at the end of each shift.
- Maintain cleanliness, sanitation, and organization of all food service areas, including kitchens, dishwashing stations, restaurants, banquet areas, patios, and bar areas.
- Complete end-of-shift cleaning duties, including sweeping and mopping floors, emptying trash receptacles, and cleaning work surfaces, stainless steel counters, and equipment.
- Clean and maintain kitchen mats, outdoor patio furniture, bar windows, and other assigned areas on a regular basis.
- Keep the dumpster and waste disposal areas clean, organized, and sanitary.
- Monitor cleaning supply inventory and notify management when replenishment is needed.
Requirements
- Up-to-date Clark County health card
In addition, the ideal candidate will be or have:
- Previous experience in a custodian or steward role
- Experience in a high-volume restaurant, resort, golf club, or banquet facility is highly preferred.

Physical Demands
Ability to perform moderate physical work, may be required to lift 100lbs. occasionally, up to 50 lbs. frequently, and up to 20 lbs. constantly, performing such activities as bending, stooping, kneeling, crouching, reaching, standing, walking, pushing, lifting, and grasping for up to five hours without sitting
Work Environment
This position operates in a restaurant setting. The noise level in the work environment can be loud. The employee may be exposed to hazards including, but are not limited to, cuts, slipping, tripping, falls and burns. Frequent hand washing is required.
